Food production contributes up to thirty percent of total greenhouse gas emissions. It also accounts for seventy percent of freshwater use and occupies nearly forty percent of our planet’s land. Much of the emissions come from livestock production, especially from cows and lamb. This is because they both share a ruminant digestive system, which causes them to emit copious amounts of the strong greenhouse gas methane into the atmosphere. In the United States, beef production accounts for over a third of total greenhouse gas emissions associated with food production. The stark reality is that humanity will not manage to limit global warming to 1.5 degrees Celsius without tackling food systems, in particular by substituting plant-based proteins for animal-based protein.
